Eunice Olaniyan is a PhD Student at MTU Cork, researching the promotion of healthy ageing through the development of plant-based snack foods.
During her time at CIT/MTU Eunice completed an Honours degree in Nutrition & Science and was awarded a Faculty Scholar award as well as a Risam PhD Scholarship.
Eunice also co-founded the Africa Society (vice-chairperson & secretary for two years), volunteered as a Peer Assistant Learning & Support Leader, worked as a Student Leader for four years, and completed the Exxcel Female Entrepreneurship program in the Rubicon Centre.
Alongside her PhD, Eunice is a member of the European Medical Writers Association; a freelance Scientific Writer on Upwork, where she have written for many food and health businesses, blogs, and consulted for start-ups.
Lastly, Eunice is a a content creator on YouTube/Instagram where she uploads educational nutrition information and cooking videos.
